I am always looking for ways to alter recipes to make them both delicious and healthy. My new Healthy Chocolate Chip Banana Oat Cookies are almost sugar free (the chocolate chips have sugar) and received rave reviews from my three kids and husband. Can’t get better than that!

Healthy Chocolate Chip Banana Oat Cookie Recipe

Serves: 12 cookies
Ingredients
- Makes 12 cookies
- 2 mashed bananas
- 1 cup quick oats
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- 2 tablespoons coconut oil (if solid, warm in microwave for 30 seconds or until liquid)
- ½-3/4 cup chocolate chips, depending how "chocolatey" you want them (I use Ghiradelli milk chocolate chips)
Instructions
- Mash 2 bananas in a bowl.
- Stir in oats, vanilla extract, salt, and coconut oil.
- Mix until combined. Stir in chocolate chips.
- Spoon walnut size amounts onto a greased cookie sheet.
- Bake for 8-10 minutes.
